Yogagirl's Drumstick Ice Cream Dessert
This is a great summer dessert recipe for a big crowd and the kids will love it. Great for summer bbqs and picnics. They taste exactly like Drumstick ice cream treats! Delicious!
Ingredients
Crust:
1-1/2 cups graham cracker crumbs
1/2 cup peanuts, chopped (optional)
1/4 cup butter, melted
Topping:
1 (8 ounce) package cream cheese
1/2 cup sugar
1/2 cup creamy/smooth peanut butter
1 large container Cool Whip
2 tablespoons milk
2 teaspoons vanilla
Hershey's chocolate syrup (to drizzle on top)
Combine ingredients for crust and press firmly into 9x13 inch pan, reserving 1/4 cup for topping.
Blend together cream cheese, sugar, peanut butter, Cool Whip, vanilla and milk until smooth (use a mixer or food processor so it gets really creamy and smooth). Spread mixture evenly over the crust (use a spatula - makes it easier).
Drizzle the top with Hershey's chocolate syrup and swirl with knife for marble effect.
Sprinkle the top with reserved crumbs.
Freeze for at least 6 hours. Remove from freezer 10 minutes before serving. Hint: Run a knife under warm water before you cut the squares and don't leave it out too long or it will melt.
Healthy version: You can use less sugar in the recipe. I also use light cream cheese and light Cool Whip and reduced-fat milk. If you are a diabetic, substitute sugar-free Cool-Whip and/or use sugar substitute instead of white sugar. The peanuts and syrup are optional but the chocolate syrup makes it taste really yummy!
Enjoy!
